These vanilla cupcakes may seem like your standard cute cupcakes.....until you take a bite and see what's going on inside! This was one of the first attempts I made at gluten free cupcakes 13 years ago when my daughter was first diagnosed, and they made a little girl so excited and happy that 4th of July. Simple, but tasty and fun to eat, these cupcakes will steal the show at your celebration! We love America!
Patriotic Cupcakes
Serves 8-12
1 box gluten-free vanilla cake mix
1 teaspoon almond extract
1 container vanilla frosting
Red and blue food coloring
Sprinkles for decorating
Make cake mix according to package instructions. Stir in almond extract. Divide the batter evenly between 3 bowls. Add red food coloring to one bowl until desired color is reached (about 1/2 teaspoon). Add blue food coloring to a second bowl of batter until desired color is reached. Leave the last bowl white. Fill muffin pan with cupcake liners. Add 2 tablespoons blue batter to each liner, followed by 2 tablespoons white batter and 2 tablespoons red batter. Bake at 350°F for about 30 minutes or until done. Allow to cool completely before frosting and decorating with sprinkles.
Step-by-step tutorial:
Gather your ingredients. You will need a gluten free vanilla cake mix, everything required to make it (not shown because it could be different depending on your mix), almond extract, vanilla frosting, red and blue food coloring, cupcake liners, and sprinkles.
Make cake mix according to instructions on package. Add 1 teaspoon almond extract and stir until mixed. This is a an awesome thing we add to all of our vanilla cakes and cupcakes. It adds the perfect flavor and makes a regular box mix taste special!
Divide the batter evenly among three bowls.
Add red food coloring to one bowl and stir until desired color is reached. Do the same with the blue. Leave one bowl white.
Line muffin tin with cupcake liners. Aren't these patriotic liners so cute? Thanks Walmart!
Divide batter among cupcake liners doing 2 tablespoons of each color.
Bake at 350°F for about 20 minutes or until done. (Bake according to package directions.)
Allow to cool completely before frosting. Frost the cupcakes and decorate with sprinkles. I like to pipe the frosting on using a disposable piping bag.

The 4th of July is one of my favorite holidays. I love the patriotic feelings, the red, white, and blue colors, and the gratitude I feel in my heart for our freedoms in this great country.
