BLT Salad


Summer and salads go so well together, and this one is a keeper! It will become a favorite to eat as a meal for lunch, or as a side to a BBQ. Everyone loves a good BLT, so putting it into salad form is naturally a good idea. Crisp romaine, juicy tomatoes, salty bacon, smooth avocados, crunchy cucumbers, fresh feta cheese..... then top it all with a delicious balsamic vinaigrette. You will want to give this a try ASAP!


 

BLT Salad

Serves 6 as a side, 3 as a main


2 romaine hearts, chopped

1 cup cherry tomatoes, cut in half

1/2 English cucumber, diced

1 large avocado, sliced

1/2 lb. bacon, cooked and crumbled

1/2 cup feta cheese

Gluten free croutons, optional


Dressing:

1/2 cup olive oil

1/4 cup balsamic vinegar

1 teaspoon mustard

1 teaspoon lemon juice

1/2 teaspoon salt


Toss salad ingredients together in a large bowl. Whisk together the dressing ingredients. Pour dressing over salad just before serving.


 

Step-by-step tutorial:


Gather your ingredients. You will need 1/2 lb. bacon, 2 romaine hearts, cherry tomatoes, an avocado, english cucumber, and feta cheese, and gluten free croutons if desired.


Cook the bacon until crisp. I love cooking baking in the oven! Lay out slices on a baking sheet lined with foil, then bake at 400°F for about 15 minutes, depending on desired crispness. So easy, cleanup is a breeze, and you don't smell like bacon after like you do when frying it in a pan. Drain on paper towels and then cut into small pieces or crumble with your fingers.


Prepare the rest of the salad ingredients by slicing tomatoes in half, chopping romaine, dicing cumber, and slicing the avocado.


For the dressing, you will need olive oil, balsamic vinegar, yellow mustard, lemon juice, and salt.


Whisk together 1/2 cup olive oil, 1/4 cup balsamic vinegar, 1 teaspoon mustard, 1 teaspoon lemon juice, and 1/2 teaspoon salt.


Place all the salad ingredients into a large bowl and toss.


You can serve the salad as a side and let everyone dress their own portion with the balsamic vinaigrette.


I love to eat this salad for lunch!


Pour on the dressing just before eating to keep the crispness of everything.
