Cherry Coke Jello


For a super fun side during the holidays, you need to try this Jello salad! Made with just a few simple ingredients, one of them being Cherry Coke, this beautiful red cup of deliciousness will become a fast favorite. We love to top ours with some whipped cream and a cherry, but you can eat it as is and fall in love. It's so festive and perfect for parties and family gatherings.


 

Cherry Coke Jello

Makes 6-8 servings


1 (6 oz.) box cherry gelatin

1 1/2 cups boiling water

1 1/2 cups Cherry Coke, chilled

1 (21 oz.) can cherry pie filling


In a mixing bowl, pour the cherry gelatin into the boiling water. Stir until dissolved. Pour in the Cherry Coke and stir. It will be foamy. Add the can of cherry pie filling and stir. Continue to stir until most of the foam is gone. Refrigerate until firm, stirring occasionally until soft set to spread the cherries throughout. If putting into individual serving dishes, allow to soft set first, then pour into single serving dishes.


 

Step-by-step tutorial:


Gather your ingredients. You will need a large box of cherry Jello (or two small), Cherry Coke, and cherry pie filling.


In a glass measuring cup or mixing bowl, microwave 1 1/2 cups water until boiling. Add the box of Jello and stir to dissolve. Pour in 1 1/2 cups chilled Cherry Coke. It will be foamy from the carbonation. Next add the entire can of cherry pie filling. Stir to combine until most of the foam is gone.


Refrigerate until soft set, stirring occasionally. This helps get the cherries throughout instead of just floating at the top. At this point you can pour into a serving dish and refrigerate until set.


You can also pour into individual serving dishes. These cups were a little big. Though beautiful, nobody could finish them as it was a lot of Jello. I think dividing it into 6-8 servings would be just right. With these cups I got 5 servings.


The color of this is just so festive and fun! I love to serve this during the holidays as it has a fun flavor with the addition of soda, and the red is just so lovely.


We like to top ours with some whipped cream and a maraschino cherry! So much fun to serve alongside a holiday meal, or at a party!
