Are you ready for a brownie unlike any other? This brownie recipe has been a favorite of our family for many years, and couldn't be simpler to make. Just think about a bite of a warm chocolate brownie covered in gooey marshmallow, maraschino cherries, and a chocolate drizzle. It's a combination that gets oohs and ahs with every forkful! Definitely special enough to be a fancy dessert, but simple enough to make it often!
Chocolate-Covered Cherry Brownies
Makes an 8X8" pan (about 9 good-sized brownies)
1 package gluten free brownie mix (we love Great Value)
Ingredients to make the brownies
2 cups miniature marshmallows
1 (10 oz.) jar maraschino cherries, well drained and chopped
1/2 cup semisweet chocolate chips
2 tablespoons heavy cream
In a mixing bowl, prepare the brownie mix according to package directions. Pour into a greased 8X8" baking pan (or 9X13 if that is what your mix makes - just double the rest) and bake according to directions. When desired doneness, remove from oven and cover with a single layer of mini marshmallows. Return to the oven and bake for an additional 2 minutes until the marshmallows are soft, but not browned. Sprinkle with the cherries. Cool on a wire rack. In a microwave-safe bowl, melt chocolate chips and heavy cream; stir until smooth. Drizzle over the brownies. Let stand until set.
Step-by-step tutorial:
Gather your ingredients. You will need your favorite brownie mix (we love Great Value!), the ingredients to make the brownies per package directions (not shown here), mini marshmallows, maraschino cherries, semi-sweet chocolate chips, and heavy cream.
Preheat oven according to package directions. Prepare brownie mix according to package directions. Pour into a greased or foil lined baking dish. My mix makes 8X8" worth of brownies, but if yours is 9X13, go ahead and do that, then double the rest of the ingredients. Bake according to package directions.
Drain the maraschino cherries, then pour onto some paper towels and pat completely dry. Chop into smaller pieces and place on paper towels again to absorb the cherry juice.
Once the brownies are baked, remove from the oven and spread the marshmallows over the top, covering all with a single layer. Put back in the oven for about 2 minutes to get the marshmallows soft and gooey, but not brown. Place on wire rack to cool. Immediately sprinkle with the cherries so they go down into the gooey marshmallow.
Once the brownies have set some, you'll want to pour on the chocolate drizzle. In a glass measuring cup, combine 1/2 cup semisweet chocolate chips with 2 tablespoons heavy cream. Microwave in 30 second intervals, stirring in between, until melted and smooth.
It's a nice consistency for a drizzle. You can do that with a spoon, or pour it into a pastry bag and drizzle over the top of the brownies.
You can decide if you want a messy drizzle or something more uniform like this. I do it different every time.
Cut and serve! We love them warm, but will also refrigerate any left. They are fantastic cold, but you can also microwave a slice for 20 seconds and it will be just like it came out of the oven. YUM!
