The colors of his salad are red, orange and yellow, so we decided to call it Autumn Jello Salad. I know, I know.... how is jello considered a salad? Well, just go with it and try this one! The flavors are really good together, not too sweet, and unique from other jello salads. It's a recipe of my grandma and we love it!
Autumn Jello Salad
Serves 6
1 (3 oz.) package lemon gelatin
1 1/2 cups boiling water
2 tablespoons lemon juice
1 cup crushed pineapple, drained
1 cup whole berry cranberry sauce
In a mixing bowl, dissolve gelatin in boiling water. Add lemon juice and stir to combine. Refrigerate to partially set. Add remaining ingredients and stir to combine. Refrigerate overnight to completely set.
Just a few simple ingredients and you've got a unique Jello salad that is the perfect colors of autumn. You need lemon gelatin, lemon juice, crushed pineapple, and cranberry sauce.
The first step is dissolving the gelatin in 1 1/2 cups boiling water, then stirring in the lemon juice. Let that refrigerate until starting to set, then stir in 1 cup crushed pineapple (drained well) and 1 cup whole berry cranberry sauce. You will love the colors! Let that set up completely. It will take 4 hours or overnight to set well. I make it the night before I need it. The tartness of the cranberries goes so well with the sweetness of the pineapple and lemon. We will make this again for sure!
