This slow cooker meal couldn't be simpler! But that doesn't mean it's lacking in taste and appeal, in fact, your family is going to gobble these up. It combines some of my favorite taco flavors simmering in lime juice and chili powder all afternoon. You simply shred the chicken, then stir in corn and salsa. That's it! Serve with your favorite taco toppings, including lime wedges, and you've got yourself and crazy good dinner.
Slow Cooker Lime Chicken Tacos
Serves 6
2 large boneless skinless chicken breasts
1/2 cup lime juice
1 tablespoon chili powder
1 cup frozen corn, thawed
1 cup chunky salsa
Gluten free flour tortillas (we love Mission), warmed
Sour cream, shredded cheese, shredded lettuce, guacamole, and lime wedges
Place the chicken in a slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours until chicken is tender. Remove and shred chicken. Spoon some juices from slow cooker over shredded chicken. Stir in the corn and salsa. Warm in microwave for about a minute to get the corn and salsa heated through. Serve in tortillas with desired toppings. Squeeze fresh lime wedges over tacos.
Step-by-step tutorial:
Gather your ingredients. You will need 2 chicken breasts, lime juice, chili powder, frozen corn, and chunky salsa.
In a glass measuring cup, combine 1/2 cup lime juice and 1 tablespoon chili powder.
Put the chicken in slow cooker, then pour over lime mixture.
I also salt and pepper the chicken.
Cook on low for 5-6 hours or until the chicken is tender.
Remove the chicken and shred with two forks. It should be very tender and juicy. Add some of the juices from the slow cooker if it needs more moisture, depending on your likes. I'd take juicy chicken over dry chicken any day!
Stir in 1 cup frozen corn, thawed, and 1 cup of your favorite salsa. A chunkier salsa is what we prefer, but any salsa will work. Since the salsa and corn aren't hot, I put it all in the microwave for a minute to heat through, but you can also just serve as is.
You can serve it with your favorite gluten free tortillas and any toppings you like. We do shredded cheese, lettuce, sour cream, guacamole, and lime wedges.
It tastes so fresh to squeeze lime juice over the taco fillings before eating. A great meal for busy families that will be eaten up with smiles all around!
