Sunshine Fruit Salad

Summer and fruit salads go hand in hand, and this one is so bright and fresh! There is a simple syrup that adds just a hint of wonderful flavor, but of course, the fruit is the star! In particular, the cantaloupe! Isn't it about time cantaloupe had a chance to shine? Of course, you can mix and match your favorite fruits and come up with your own favorite combinations. Substituting canned fruit when fresh is not in season is also great. Need a new side dish for your next BBQ? Give this a try!


 

Sunshine Fruit Salad

Serves 8-10


1 cantaloupe, seeded, peeled, and cut into chunks

1 lb. grapes

3 peaches, cut into bite-size pieces

1 can mandarin oranges, drained

1 can pineapple chunks, drained

1/4 cup honey

2 tablespoons lime juice

1/2 teaspoon ground ginger


Prepare your fruit. In a small bowl whisk together the honey, lime juice, and ginger. Pour over fruit and stir to coat. Cover and refrigerate for 2 hours before serving.


 

Step-by-step tutorial:


Gather your ingredients. You will need a cantaloupe, 3 peaches, grapes, canned pineapple chunks and mandarin oranges, honey, lime juice, and ground ginger.


Drain all canned fruit.


Remove seeds and peel from cantaloupe and cut into chunks or scoop with a melon baller. Cut peaches (with or without the skin....your preference) and add all the fruit to a large mixing bowl. For the syrup, combine 2 tablespoons lime juice and 1/2 teaspoon ground ginger. Whisk in 1/4 cup honey. Pour the glaze over the fruit and toss to coat.


It's such a beautiful color combination!


Cover and refrigerate the fruit for at least 2 hours before serving. Give it a toss just before serving. Serve with a slotted spoon.
