Bars and Brownies

Lemon Squares

Lemon Squares

Lemon squares are a little taste of heaven. A buttery shortbread crust, luscious lemon curd filling, crackly top, all sprinkled with a dusting of powdered sugar. I'm a huge chocolate fan as you know, but these little gems can stand up to a chocolate cake and win depending on the day.... they are that good. Different from your standard lemon bars, you will quickly make the switch once you try them. The recipe makes a nice 8" square dish of these beauties, and they will be gone before the day is over.

Mint Layered Brownies

Mint Layered Brownies

Brownies come in all types and varieties, and this recipe is definitely one to add to your favorites! Soft cake-like brownies with a layer of smooth mint frosting, topped with a chocolate ganache..... then cut into bite-size squares for devouring and sharing. It is one of the first recipes with flour that I had great success converting when my daughter started eating gluten free. They come out perfect every time and have just the right bit of mint that keeps you coming back for more.

Peaches and Cream Bars

Peaches and Cream Bars

When fresh peaches are in season, these delicious bars are a must! With a shortbread crust, a creamy peach filling, and crumble topping, you will love this dessert. It's easy to make and bake, and is very fun to share with friends and neighbors. We like to top ours with whipped cream or a scoop of vanilla ice cream. They are amazing cold too!

Blueberry Pie Bars

Blueberry Pie Bars

We've made this recipe twice in the past week because it's THAT GOOD. All the goodness of a blueberry pie, but in bar form. They are naturally gluten free AND vegan, which is a bonus because we have a vegan friend who loves good desserts. No weird ingredients, just a super awesome method to making them. If you still haven't taken advantage of blueberry season, I suggest you start now and try these bars!

Avalanche Bars

Avalanche Bars

If you've tried Avalanche Cookies and have fallen in love, then these will be right up your alley! They are the beloved Avalanche Cookies, but in bar form! So basically, a fancy version of a rice crispy treat. Envision white chocolate, peanut butter, marshmallows, and semi-sweet chips all combined with a crispy cereal and pressed into bars make cutting and serving a cinch! I love these cold, so I keep them refrigerated which makes them a little more crispy and crumbly..... so my husband thinks their name comes from bits falling off while you eat them . ? I still don't know the history of their name, but I do know they are addicting and YOU WILL LOVE THEM.

Chocolate Heaven Layer Bars

Chocolate Heaven Layer Bars

Are you ready for a seven-layer bar that is pure heaven? These seven layers include more chocolate than your average bar, and are made with a chocolate cookie crust! To top it all off, you drizzle it all with Nutella before pouring over the sweetened condensed milk. IT IS PHENOMENAL. Gooey deliciousness in every single bite.

About Me

About me photo

Hello! I'm a mom of four kids and live in Virginia. Two of my kids have celiac disease, so I've been cooking gluten free for 18 years now! It was very overwhelming when my oldest daughter was diagnosed back in 2007, but it has been a fulfilling journey ever since. I know there are a lot of gluten free blogs out there, but I wanted to create one devoted to food specifically for kids.

Through the years, I've had many friends come to me when they or someone close to them have started down the gluten free path. I used to send them an email detailing our favorite brands, what breads, pastas, pizza, etc. are most enjoyed by my kids, as well as some of our best recipes to get them started. I am hoping to help others who may be new to gluten free eating or just want to have some fresh ideas.

Cooking and baking have always been a passion of mine, so when my daughter was diagnosed, my mom told me "you're just the mom to make the best of this". Moms know just what to say!! It has definitely become second nature to me, and I've found ways to help my kids enjoy food just as much as they would if they could have gluten. The trick..... make it so delicious that my whole family enjoys it! Let's get started!
