Creamy Black Bean Salsa

Creamy Black Bean Salsa

A good black bean salsa is not hard to come by, but I've never found one quite as unique and delicious as this one. Black beans, corn, peppers, onion, cilantro, and a creamy dressing make this side dish a favorite with our family! When you take it to a party, you will leave with an empty bowl and everyone begging for the recipe. Personally, I could eat this by the spoonful and call it a meal because it's so yummy, but our family preference is to serve it with Scoops corn chips. Any way you eat it, you will be glad you did!

7up Salad

7up Salad

For a fun and unique side dish, you need to try this 7up salad! Made with soda mixed into the pineapple gelatin layer, it has a fun fizzy taste. The topping is to die for. It's like a delicious and light homemade pineapple pudding. Top the whole thing with a sprinkling of cheddar cheese..... and you will not believe the awesome combination of flavors! This reminds me of my childhood and Thanksgiving dinners. 7up Salad was often on the menu and was like a dessert along with the meal - even before the pies came out!

Pistachio Salad

Pistachio Salad

For a fun side dish, give this Pistachio Salad a try. It comes together in under five minutes and is always a favorite at events with family and friends. It's a great salad to serve at holidays because of its fun green color. A little fruity, a little nutty, and super creamy!

Raspberry Jello Salad

Raspberry Jello Salad

Another delicious Jello salad from my Grandma..... this could be my favorite yet! Raspberries, bananas, pineapple, and a delicious layer of sour cream. Not only is it yummy, but it's so pretty, don't you think? It can be served all year long, but I'm thinking it would be especially pretty for a Christmas meal.

Butterscotch Apple Dip

Butterscotch Apple Dip

When fall rolls around, we all start craving fresh apples and THIS dip! Caramel apples are amazing, and there are a lot of caramel concoctions out there that are divine. But then we came upon this apple dip, and it won our hearts forever! It has a butterscotch base, with a cinnamon undertone that is just so amazing, especially warm! You must give it a try and see how many apples your kiddos will eat just to gulp this deliciousness up!

Autumn Jello Salad

Autumn Jello Salad

The colors of his salad are red, orange and yellow, so we decided to call it Autumn Jello Salad. I know, I know.... how is jello considered a salad? Well, just go with it and try this one! The flavors are really good together, not too sweet, and unique from other jello salads. It's a recipe of my grandma and we love it!

About Me

About me photo

Hello! I'm a mom of four kids and live in Virginia. Two of my kids have celiac disease, so I've been cooking gluten free for 18 years now! It was very overwhelming when my oldest daughter was diagnosed back in 2007, but it has been a fulfilling journey ever since. I know there are a lot of gluten free blogs out there, but I wanted to create one devoted to food specifically for kids.

Through the years, I've had many friends come to me when they or someone close to them have started down the gluten free path. I used to send them an email detailing our favorite brands, what breads, pastas, pizza, etc. are most enjoyed by my kids, as well as some of our best recipes to get them started. I am hoping to help others who may be new to gluten free eating or just want to have some fresh ideas.

Cooking and baking have always been a passion of mine, so when my daughter was diagnosed, my mom told me "you're just the mom to make the best of this". Moms know just what to say!! It has definitely become second nature to me, and I've found ways to help my kids enjoy food just as much as they would if they could have gluten. The trick..... make it so delicious that my whole family enjoys it! Let's get started!
