Autumn Jello Salad

Autumn Jello Salad

The colors of his salad are red, orange and yellow, so we decided to call it Autumn Jello Salad. I know, I know.... how is jello considered a salad? Well, just go with it and try this one! The flavors are really good together, not too sweet, and unique from other jello salads. It's a recipe of my grandma and we love it!

Grandma's Cottage Cheese Jello Salad

Grandma's Cottage Cheese Jello Salad

This is a very nostalgic recipe for me! My grandma would make this for every Thanksgiving that I can remember. It is creamy, light, lemon-limey, fruity, and a not too sweet. A very unique salad that sets so well you can cut it into squares. The color is fun too. Doesn't it just look like the 1950's?

Grandma's Fruit Cocktail Cake

Grandma's Fruit Cocktail Cake

A cake with fruit cocktail in it? This recipe really intrigued me. There is no oil or butter in this cake, so the juice from the fruit is what brings everything together. It was a delicious, moist cake with a caramelized top from the brown sugar and nuts. The little bits of fruit were studded throughout and tasted especially yummy warm with a scoop of vanilla ice cream!

Homemade Sloppy Joes

Homemade Sloppy Joes

What family doesn't love a good sloppy joe night? This beef mixture is SO MUCH BETTER than Manwich or any canned version. The sauce has a hint of sweetness and is packed with flavor. We love to toast our buns under the broiler first so they don't get soggy from the sloppy joe meat. My son and husband love a slice of cheese on theirs too. We often have sloppy joes with tater tots to get that Napolean Dynamite vibe.

Apple Cobbler

Apple Cobbler

For the ultimate fall dessert, give this apple cobbler a try! It is my grandma's recipe and is so warm and comforting. The dumplings on top are delicious and work great gluten free. Served with a scoop of vanilla ice cream, it's a dessert you will love to share year after year!

Aebleskivers

Aebleskivers

Due to our Danish heritage, my grandma loved making her family aebleskivers. When I first got married we invested in an aebleskiver pan and have since perfected the art of making these beautiful golden balls gluten free. Light and fluffy, they are a cross between a donut and a pancake. We love them topped with powdered sugar and maple syrup.

About Me

About me photo

Hello! I'm a mom of four kids and live in Virginia. Two of my kids have celiac disease, so I've been cooking gluten free for 18 years now! It was very overwhelming when my oldest daughter was diagnosed back in 2007, but it has been a fulfilling journey ever since. I know there are a lot of gluten free blogs out there, but I wanted to create one devoted to food specifically for kids.

Through the years, I've had many friends come to me when they or someone close to them have started down the gluten free path. I used to send them an email detailing our favorite brands, what breads, pastas, pizza, etc. are most enjoyed by my kids, as well as some of our best recipes to get them started. I am hoping to help others who may be new to gluten free eating or just want to have some fresh ideas.

Cooking and baking have always been a passion of mine, so when my daughter was diagnosed, my mom told me "you're just the mom to make the best of this". Moms know just what to say!! It has definitely become second nature to me, and I've found ways to help my kids enjoy food just as much as they would if they could have gluten. The trick..... make it so delicious that my whole family enjoys it! Let's get started!
