Potato Kielbasa Skillet

Don't we all need more one-skillet-ready-in-30-minute dinners? This is a favorite! I've had this recipe in my rotation for over 10 years now, and it tastes great every time. It uses a smoked kielbasa, red potatoes, and spinach with a very tasty glaze. Of course, I still have kids who eat AROUND the "green stuff", but I personally enjoy wilted spinach and know the goodness that comes from eating it! Oh, and there is bacon in there too. Yes! I like to serve this with a bowl of vanilla yogurt topped with berries and granola. It's a well-rounded and satisfying meal!

Comfort food at it's finest! This dish is like homemade chicken pot pie, but with homemade biscuits instead of pie crust. I love creamed vegetables and grew up eating creamed peas over mashed potatoes all the time. A favorite! This dish gives you creamed potatoes, peas, carrots, and chicken that you serve over warm, tender flaky biscuits. It's enjoyed by kiddos and adults alike, and couldn't be simpler to prepare. This is one of my go-to easy recipes for pork. My kids have always loved it through all age stages, being kid friendly but also sophisticated enough for adults. It's prepared in under 30 minutes and has such a great flavor and texture. Pork schnitzel is a popular German food, so you may have had something similar before. We really love the honey-lemon glaze this recipe makes. Served with some roasted potatoes, this meal is filling and satisfying!

This dinner! ! It's one of my go-to's because it is SO EASY, but the flavors are amazing. It tastes like something from a restaurant, but you can make it in the time it takes you to cook the rice (less actually). This is a great dinner to make when you don't know what to have for dinner and everyone is starving and hangry! You most likely have all of the ingredients on hand, and if not now, you will once you make it. It saves us from doing another Chick-fil-A run (although I ❤CFA) and EVERYONE loves it!

One of our favorite summer dinners is grilled chicken. We used to love to use the Yoshida sauce you can get at Costco, but it is not gluten-free, so about 13 years ago I had to come up with our own sauce. This one is similar, but even better! After you make the sauce, you marinade chicken thighs in it overnight, then grill the chicken with some pineapple slices. We keep some of the sauce to pour over the chicken and rice. It's a healthy and delicious meal that kiddos of all ages will devour. You will love the sauce so much you'll want to drink it!

Chicken Cordon Bleu is a special dish to us because it is what was served at our wedding luncheon. I have a few great recipes, but this one is the easiest and makes this dish doable enough to not just be for special occasions. It's a great choice for dinner with kids because most love chicken, ham, and cheese. Coat in crunchy crumbs and top with a delicious sauce, and you have a meal everyone will rave over!

Hello! I'm a mom of four kids and live in Virginia. Two of my kids have celiac disease, so I've been cooking gluten free for 18 years now! It was very overwhelming when my oldest daughter was diagnosed back in 2007, but it has been a fulfilling journey ever since. I know there are a lot of gluten free blogs out there, but I wanted to create one devoted to food specifically for kids.

Through the years, I've had many friends come to me when they or someone close to them have started down the gluten free path. I used to send them an email detailing our favorite brands, what breads, pastas, pizza, etc. are most enjoyed by my kids, as well as some of our best recipes to get them started. I am hoping to help others who may be new to gluten free eating or just want to have some fresh ideas.

Cooking and baking have always been a passion of mine, so when my daughter was diagnosed, my mom told me "you're just the mom to make the best of this". Moms know just what to say!! It has definitely become second nature to me, and I've found ways to help my kids enjoy food just as much as they would if they could have gluten. The trick..... make it so delicious that my whole family enjoys it! Let's get started!
