This is one of those recipes that is super easy but is always a hit! Only three ingredients and a slow cooker and you have a delicious dinner on the table that everyone loves. Serve these meatballs over rice, pasta, or mashed potatoes. Once you try them, you will be a lifetime fan.
Sweet Pork Tacos
This is by far the most requested dinner at my house! For sure in our top 5 dinners. The sweet pork is a copycat recipe of Cafe Rio's pork (although I think this is even better). Tacos made with this delicious pork, a homemade cilantro ranch dressing, and semi-homemade taco shells are the best! We keep them simple and just top them with cheese, lettuce, sliced olives, and the cilantro dressing, but that is totally up to you! If you are needing something new to try, I highly recommend this dinner. It's a no fail, easy, but DELICIOUS way to do tacos!
Cuban Pork Roast with Coconut Rice and Mango
This slow cooked dinner is full of so many delicious flavors! The pork is cooked all day with black beans, sweet potatoes, and red pepper in coconut milk, then served alongside coconut rice and freshly cut mango. It's not only extremely tasty, but healthy too! It makes a beautiful presentation on the plate, so you can feel fancy when serving to guests, although you'll quickly find out how easy this is to make!
Pepperoncini Beef Sandwiches
Do you love sandwiches that require minimal effort, but taste like restaurant quality? These are exactly that! The beef cooks with a jar of pepperoncini's and garlic all day, you shred it, and serve it on toasted buns with melted Swiss cheese and mayo..... oh my! It's so delicious and I've never met anyone who didn't love it. It's a great dinner to serve a crowd, and goes with any of your favorite sides!
French Dip Sandwiches
This is a great meal for a busy day because it cooks all day in a slow cooker. We love to eat it on Sundays because I can get the roast cooking in the morning, then it takes about 30 minutes to prepare the rest when you are ready to eat! The recipe is adapted from Our Best Bites (one of my favorite food blogs) and can be made gluten free so easily! Give them a try! Kids of all ages will enjoy "dipping" their sandwiches in the au jus that is naturally made while it cooks.
Slow Cooker Pork Carnitas
There is this amazing taco place here in DC called District Taco that I actually crave regularly! They make the best Pollo Asado and Pork Carnitas tacos. So when I found this amazing recipe that tastes just like my favorite tacos, I felt like I hit the jackpot! Plus, the pork is made in the slow cooker so it couldn't be easier. You need to try this recipe ASAP! It makes me so happy just thinking about it.
