This is by far the most requested dinner at my house! For sure in our top 5 dinners. The sweet pork is a copycat recipe of Cafe Rio's pork (although I think this is even better). Tacos made with this delicious pork, a homemade cilantro ranch dressing, and semi-homemade taco shells are the best! We keep them simple and just top them with cheese, lettuce, sliced olives, and the cilantro dressing, but that is totally up to you! If you are needing something new to try, I highly recommend this dinner. It's a no fail, easy, but DELICIOUS way to do tacos!

This slow cooked dinner is full of so many delicious flavors! The pork is cooked all day with black beans, sweet potatoes, and red pepper in coconut milk, then served alongside coconut rice and freshly cut mango. It's not only extremely tasty, but healthy too! It makes a beautiful presentation on the plate, so you can feel fancy when serving to guests, although you'll quickly find out how easy this is to make!

Barbacoa beef bowls are so easy but taste like a restaurant quality dish! The beef is extremely flavorful after cooking in a slow cooker all day. It has just the right amount of heat that goes so well with cilantro lime rice. We love these bowls topped with black beans, corn, salsa, avocados, cilantro, and cilantro lime dressing. A meal everyone loves that you will happily serve to family and friends.

It's so delicious and I've never met anyone who didn't love it. It's a great dinner to serve a crowd, and goes with any of your favorite sides!

This easy meal has always been a staple recipe in our house. My kids used to joke that if they smelled it cooking, they knew we were having people over for dinner. It really is a great meal to serve with dinner guests because everyone loves it! It cooks in a slow cooker for just an afternoon. I usually put it together at lunchtime, then when dinner rolls around you just prepare the toppings and serve! It's another recipe that first came to mind when my kids were diagnosed with celiac disease since it is a naturally gluten free dinner and a kid favorite that they will request time and again. I'm excited to share this with you!

Hello! I'm a mom of four kids and live in Virginia. Two of my kids have celiac disease, so I've been cooking gluten free for 18 years now! It was very overwhelming when my oldest daughter was diagnosed back in 2007, but it has been a fulfilling journey ever since. I know there are a lot of gluten free blogs out there, but I wanted to create one devoted to food specifically for kids.

Through the years, I've had many friends come to me when they or someone close to them have started down the gluten free path. I used to send them an email detailing our favorite brands, what breads, pastas, pizza, etc. are most enjoyed by my kids, as well as some of our best recipes to get them started. I am hoping to help others who may be new to gluten free eating or just want to have some fresh ideas.

Cooking and baking have always been a passion of mine, so when my daughter was diagnosed, my mom told me "you're just the mom to make the best of this". Moms know just what to say!! It has definitely become second nature to me, and I've found ways to help my kids enjoy food just as much as they would if they could have gluten. The trick..... make it so delicious that my whole family enjoys it! Let's get started!
