Gluten Free Cinnamon Roll Cake
Cinnamon rolls are amazing things.... I'll be the first to admit this. But making them? Especially gluten free? Not so amazing. Doable? Yes. But this Cinnamon Roll cake is SO AMAZING to eat and make that we do this about once a month instead! This makes a special breakfast, afternoon snack, or even dinner on those nights that we all have. 😂 You will not be disappointed - this will fit the bill for a warm cinnamon roll in your life! And your kids will never know the difference.
Blueberry Cinnamon Toast Bakes
These little breakfast gems are like a special morning treat but are so simple to make! Who doesn't like cinnamon-sugar toast and hot blueberries that POP in your mouth when you eat them? We've been making this recipe for over 8 years now and never tire of it. It's a great after school snack too.
Overnight Oats
One of my favorite parts of summer that I look forward to is making these fun breakfasts to have ready in the refrigerator all week long. Have you tried overnight oats yet? Basically, it is rolled oats combined with yogurt, your favorite milk, then refrigerated so the oats absorb all the milky goodness and turn into a breakfast pudding of sorts! You eat them cold (which is why we love them in summer) and they are so filling and good for you. There are endless options and flavors out there to try. I'm sharing my top six with all the how-to's and ingredients you will need. I think we should call these "Jars of Joy" because that is how they make me feel when I know there is one waiting for me in the morning!
Blueberry Breakfast Cake
Can you smell this? Oh, it's divine! A blueberry breakfast cake is the perfect way to start any day. Blueberries, lemon zest, a not-too-sweet cake, and coarse sugar topping. The ingredient we have to thank for this deliciousness is buttermilk! I feel like any recipe I have that uses buttermilk is my favorite. Serve this alongside some bacon or sausage and scrambled eggs, and you have yourself the perfect breakfast or brunch. Now is the time to try this with blueberry season just around the corner!
Orange Rolls
My kids had never tried an orange roll until I made these! Oh happy day when you can give them something they never thought they could have. Rolls like these or cinnamon rolls are labor intensive, and take time with rising, but they are not hard and are so worth it! Sweet orange sugary butter is nestled in the roll dough and then slathered with an orange cream cheese frosting. It's as good as it sounds, and I hope you'll give them a try!
Aebleskivers
Due to our Danish heritage, my grandma loved making her family aebleskivers. When I first got married we invested in an aebleskiver pan and have since perfected the art of making these beautiful golden balls gluten free. Light and fluffy, they are a cross between a donut and a pancake. We love them topped with powdered sugar and maple syrup.
