Breads, Rolls, and Muffins
Zucchini Bread Mini Loaves
Since zucchini is in season, it's time to make some zucchini bread! This is one bread I love to make into miniature loaves. It makes it shareable, gives you more of that delicious crust, and is just fun to eat small slices slathered in butter. This recipe is beyond simple, all you need to do is invest in a mini bread loaf pan. It is definitely worth it to buy one if you don't already own one, especially if you love to share your baking. Baked goods are always my favorite gifts to give and receive. It's also an easy way to get zucchini into your kiddos!
Applesauce Pumpkin Bread
Did you ever think to pair apples and pumpkin? It makes for a delicious bread in the fall! This is one of my grandma's recipes, and we love it! It makes 1 large loaf, or 4 mini loaves which I love to make and share. It's also a great ratio of crisp outer crust and soft insides. This gluten free bread is unbelievably moist and flavorful!
Orange Rolls
My kids had never tried an orange roll until I made these! Oh happy day when you can give them something they never thought they could have. Rolls like these or cinnamon rolls are labor intensive, and take time with rising, but they are not hard and are so worth it! Sweet orange sugary butter is nestled in the roll dough and then slathered with an orange cream cheese frosting. It's as good as it sounds, and I hope you'll give them a try!
Buttermilk Banana Bread
Don't you just love the smell of banana bread baking? It makes me so happy. I actually get excited when we don't keep up with our banana purchases and several get overripe! There are so many great recipes out there that use ripe bananas, and this is one you'll want to try! The buttermilk is the secret ingredient that keeps it super moist and delicious.
Easy Buttermilk Biscuits
Sometimes you just need a warm, salty, flaky biscuit slathered in honey or jam to make everything in the world right again. These buttermilk biscuits are so easy and make a small batch so you can have them every night if you wish. We love them covered in sausage gravy for breakfast, or with creamed chicken and vegetables (recipe here) or just alongside a steamy bowl of soup. You would never know they are gluten free!
Grandma's Famous Stuffing
Ever since I can remember, this stuffing has been part of our Thanksgiving table. My sweet Grandma Clark knew how to make it just right, and then my mom taught me. I remember many Thanksgiving Eve's staying up with my mom and breaking up the bread into a big bowl to dry overnight. There isn't an exact calculation with ingredient amounts.... lots of eyeballing and tasting.... but that allows you to season it to your liking. It tastes just as wonderful with gluten free bread as the original!
