I haven't met a kid who doesn't love rice crispy treats or candy corns, so combining the two makes a super fun Halloween dessert! Easy and fast, you will love to make something that will light up faces with pure joy. The technique is fun and will wow those you share with. These are definitely worth a try this fall!
Candy Corn Crispy Treats
Makes 12
6 1/2 cups gluten free crispy rice cereal
3 tablespoons butter
1 (10 oz.) bag mini marshmallows
Red food coloring
Yellow food coloring
Wilton White Icing Color
Lightly spray a pie dish with nonstick cooking spray. In a medium saucepan, melt the butter over medium heat. Add the marshmallows and stir until completely melted. Transfer half of the melted marshmallows to a large mixing bowl. Add 10 drops of yellow food coloring and mix well. Add 3 cups of cereal and stir until evenly coated. Using buttered or wet hands, press the mixture into a ring around the outer edge of the dish. Transfer about 4/5 of the remaining marshmallow mixture to another mixing bowl. Add 10 drops of yellow and 6 drops of red food coloring and mix well. Add 2 1/2 cups cereal and stir until coated. Press the mixture firmly inside against the yellow ring, leaving an empty circle in the middle. Add 6 drops of Wilton White Icing Color to the remaining marshmallow mixture and stir until incorporated. Add 1 cup of cereal and mix well. With wet hands, press the white crispy treat mixture into the center. Allow to cool completely. Turn dish upside down onto a cutting board. Cut the treats into 12 wedges.
Step-by-step tutorial:
Gather your ingredients. All it takes is the regular stuff for rice crispy treats (cereal, mini marshmallows, and butter), plus some food coloring and Wilton's White Icing Color.
In a medium saucepan, melt 3 tablespoons butter, then add the bag of marshmallows and stir until melted and smooth. Remove from the heat. Pour about 1/2 of the melted marshmallow into a mixing bowl. Add 10 drops of yellow food coloring and stir until combined.
Add 3 cups GF rice crispy cereal and stir until fully coated.
Grease a pie dish, or use a silicone cake dish. With buttered or wet hands (I find just wetting my hands with cold water works great) form a ring of yellow crispy treats around the outside of the dish. Pack it in tight.
Place about 4/5 of the remainder melted marshmallows into another mixing bowl. Add 10 drops of yellow and 6 drops of red food coloring. Stir to make orange, then add 2 1/2 cups cereal and stir to coat.
Using same technique, make an orange ring inside the yellow ring, squishing it up against the yellow ring and leaving a hole in the middle.
With the remainder marshmallow, add 6 drops of Wilton White Icing Color. This is great because even though the marshmallow is already white, it will just look like regular rice crispy treat color without this. This will make the middle section nice and white! Add 1 cup of cereal and stir to coat.
Fill in the remaining hole.
Allow the crispy treats to cool completely, then dump upside down onto a cutting board when set. Cut into 12 triangle wedges like you would a pizza.
Now you have these adorable candy corn crispy treats!
