Coconut Rice Pudding


If you know me, you know I LOVE rice pudding. So, when I came across this recipe in a new cookbook I got for Christmas, I was elated! The other great love I have is mango and sticky rice, a dessert we always get at our favorite Thai restaurant. Combining the two is heaven! You will love this creamy rice pudding made with coconut milk then topped with fresh mangos and toasted coconut.


 

Coconut Rice Pudding

Serves 4


2 cups cold cooked medium white rice

2 cups whole milk

1 (14 oz.) can unsweetened coconut milk

1/2 cup sugar

1/4 teaspoon salt

1/4 teaspoon ground cardamom

1/2 teaspoon vanilla

2 ripe mangos, seeded, peeled, and diced

1/2 cup shredded coconut, toasted


In a heavy saucepan, combine rice, milk, coconut milk, sugar, salt, and cardamom. Bring to a boil, then turn down heat to a simmer. Cook, uncovered, stirring frequently, until creamy, about 30 minutes. Stir in vanilla. Serve warm with mango and toasted coconut on top.


 

My sweet husband knows my love for cookbooks, so he really spoiled me this year for Christmas and got me several new ones. One of my favorites is "It's a Wonderful Life - The Official Bailey Family Cookbook". Not only is that one of my all-time favorite Christmas movies that I watch every year, but I'm a huge fan of food from that era. This cookbook is full of delicious recipes, wonderful photos, and great commentary relating to the movie throughout. I'm excited to share some of my favorite recipes on here with you!


As I said above, this recipe caught my eye right away. Why have I never thought of this myself? Making the beloved rice pudding I grew up with using coconut milk, so it's similar to a sticky rice pudding! It is quite divine. Not as sweet as my other recipe you can find here but so creamy and delicious. It feels like a lighter dessert and we love it!



It's such a cozy winter dessert. A warm bowl of rice pudding is just what you need!
