Roll-up Pancakes

We are definitely a crepe family, so when I came across this recipe for a thicker version of crepes that are more like a thin pancake you fill and roll up, I knew we had to try it! It is now my most requested breakfast! It was super simple to make gluten free because it only needs a little flour. The secret ingredient is cottage cheese! Who knew? My kids all fill theirs uniquely; some just like maple syrup and powdered sugar, some jam and whipped cream, and others Nutella and fresh berries. What would you put in yours? Well, there is only one way to find out..... make this recipe ASAP!

 

Roll-up Pancakes

Serves 6


1 cup lowfat cottage cheese

6 large eggs

1/2 cup GF flour (I use white rice flour)

1/4 teaspoon salt

1/4 cup vegetable oil

1/4 cup milk

1/2 teaspoon vanilla

2 tablespoons sugar


Combine all of the ingredients in a blender until smooth. Heat an 8-inch skillet over medium heat. Lightly spray with nonstick cooking spray. Lift the skillet from the heat and pour in about 1/4 cup batter, swirling in a circle to fill the pan. Return to heat and cook the pancake until it starts to form bubbles, then shake the pan to get the pancake mobile, and using a wide spatula, flip it over. Cook for another 30 seconds or until lightly brown. Slide the pancakes onto a plate, repeating with all the batter and spraying the pan between each pancake. They can stack on each other while you are cooking the others. Serve by filling with your favorite fillings down the middle and rolling up.


 

Step-by-step tutorial:


Gather your ingredients. You will need cottage cheese, eggs, GF flour, salt, vegetable oil, milk, vanilla, and sugar.


Put all of the ingredients into a blender.


Blend until smooth. The batter is runny like a crepe batter.


Spray your skillet, then pour some batter in, swirling the pan to cover the whole bottom.


Let it cook on medium heat until it starts forming bubbles and the top isn't too runny. Shake the pan to get it loose, then using a spatula, carefully flip over.


Cook for another 30 seconds. You want both sides to be golden brown.


Serve with toppings. Fill each pancake down the middle......


....then roll up like a crepe. Heaven!!


Filling choices are up to you. We love Nutella, berries, bananas, jams, whipped cream, maple syrup, and powdered sugar. Any way you fill them, they will become a new family favorite for sure!
